A simple, fast and tasty dish.
– 4 Carrots
– 1 Onion
– 1 Potato
– 1 Liter of Water
– 250 gr Boiled Chickpeas
– Olive oil
– Sweet Paprika 1/2 tsp
– Dill 1/2 tsp
– 1 teaspoon Sesame seeds
– Salt to taste
– 4 Fresh Mint Leaves
Pour the OIL into a large pot. Add the SESAME SEEDS, SWEET PAPRICA & DILL to cold oil and heat for a few seconds to release their wonderful aroma.
Cut the onions into cubes, add to pan and mix well. Then add the coarsely cut CARROTS and POTATOS. Roast for a few minutes over medium heat and, whilst increasing the heat, add all the WATER.
Adjust SALT and bring to a boil gently, until everything is soft.
Blend with an immersion blender.
Add the previously washed & drained CHICKPEAS.
Finally add the chopped MINT LEAVES.
